A dispute has arisen between the inhabitants of Tabasco and Chiapas regarding the origin and ownership of pozol, an ancient drink from the region. The people from Chiapas claim to be the creators of this drink and have declared March 18 as ‘Pozol Day’, which is celebrated in the Tuxtla Gutiérrez market. On the other hand, the people of Tabasco claim to be the true inventors and feel offended by the statement made by the people of Chiapas.

“It is not from Chiapas, pozol was born in Tabasco, we have an employee who is originally from Chiapas and here he learned to prepare pozol and there it is not common, here in the houses and the ranches they know how to prepare it, it comes from generation to generation, Pozol is from Tabasco, it is one hundred percent from Tabasco,” said Juan Ortiz, vendor of this ancient drink in La Pasadita in the Tamulté neighborhood.

HIS STORY

Originally the Mayas of Tabasco called it buk’a. Thanks to trade routes, its consumption spread to other places in the south of what is now Mexico and part of Central America, particularly in indigenous communities. Formerly it was also consumed in various regions of Oaxaca and southern Veracruz.

The root of the problem lies in the lack of clear historical documentation on the origin of pozol. Since pre-Hispanic times, both the inhabitants of Chiapas and those of Tabasco have used corn as a common ingredient in their diet, so it is difficult to determine who first created this drink.
